The confectionery area consists of those products which are sweet. The way in which ingredients are applied can be as simple as mixing them in by hand or with a standard mixer, to adding layer after layer in an very time consuming but rewarding outcome, a method known as panning, or mixing the ingredients into a hot sugar based mass, as with many hard candies.

Confectionery is another area within the industry where science and knowledge truly meet art and creativity. The colors desired are often bright and intense, but can also be subtle and pastel. These shades can be achieved with synthetic and natural colorants. The flavors tend to accent the sweet, including rich, nutty, buttery or fruity, to name a few.

As with all applications, it is key that the color and flavor are maintained throughout the desired shelf life of the product.
