Dairy based products are those products which are based upon or contain milk, or those products which are directly connected to these milk based products. Many dairy products have a relatively short shelf life, such as yogurts, some processed cheeses and dairy based beverages. The flavors used typically complement the dairy notes and provide those traditional tastes we are accustomed to. Products like ice cream and frozen desserts have less urgent shelf life needs, as the products have mild processing and are kept frozen through the shelf life of the product.

There is also a tendency or propensity to use naturally derived ingredients for these products, where you have colors like annatto which have been used for coloring cheeses for a century. The flavors used can add richness, like vanillas, fermented notes, creamy or buttery, sweet or nutty notes, fruity or even savory, and combinations thereof, to provide the most ideal final product and consumer taste appeal.
